Assyrtiko Magnum is a truly exceptional wine in our collection. This single-origin wine, crafted from the Assyrtiko grape variety, which originated on the island of Santorini but is now cultivated across Crete and Greece, is celebrated for its vibrant acidity and distinct minerality. The uniqueness of Assyrtiko Magnum lies in its vinification method, which includes ageing on fine lees for a year in a new French oak barrel.
This process imparts delicate aromas of vanilla, oak, and citrus, such as grapefruit, lime, and orange marmalade. Bottled exclusively in magnum size and sealed with natural corks from Portugal, the wine’s cellaring process is further enhanced, adding a unique character to Assyrtiko wines.

VINIFICATION
For Assyrtiko Magnum, a small portion of each harvest is set aside, and after fermentation, it is aged in a new French oak barrel with a light toasting. This delicate maturation process ensures the wine retains its varietal character, with its primary aromas remaining intact. After 12 months of ageing in fine lees, the wine is bottled exclusively in magnum format (200-300 bottles per vintage), where it continues to mature for another 12 months under natural cork in the cellar, in ideal conditions of temperature and humidity, before being released to the market.
