3.14 Kotsifali 2023

Product of organic farming

For the 2023 vintage, we harvested the Kotsifali grape variety on two different dates. First, we picked the grapes from the eastern part of the vineyard at 11.5% alcohol, and then, 10 days later, we harvested the western part, allowing the grapes to mature to 13.5%. Each part was vinified separately, and the two blocks were blended at the end of fermentation.

This method is an ancient technique passed down from our ancestors for the Kotsifali grape. The result, “3.14,” is rich with ripe fruit, including cherry, as well as earthy Cretan herbal notes that dominate the nose. On the palate, the silky texture, vibrant acidity, and soft tannins make “3.14” a pleasant, low-alcohol natural wine, perfect for enjoyment at around 16°C.

Decanting is recommended. Ideal for serving by the glass in restaurants and wine bars, this aromatic red wine is rounded with 13.5% alcohol.

It has a very complex and concentrated nose. It reveals aromas of red fruit, spices with hints of herbs.

VINIFICATION

Careful grape selection, destemming, transfer of grapes using gravity, without mechanical means, to stainless steel fermentation tank. 

Spontaneous alcoholic fermentation in the presence of grape marc at a controlled temperature. Postfermentation maceration with grape marc. The marc is separated from the wine, which is then moved to the storage tank. No sulphur dioxide was added or used at any stage of vinification. 

Mild natural vinification, unfiltered.

COLOUR

Deep ruby color.

It has a medium structure body, with elegant tannins and pleasant aftertaste.
