

3.14 Kotsifali – Merlot 2023
Product of organic farming
Merlot was harvested on the 25th of August, and Kotsifali on the 28th. Each variety was vinified separately using the Saignée method, with native yeasts and fermented to complete dryness. The wine was bottled in early January and released in March.
Rosé wines are a fantastic expression of the Cretan terroir, as our climate is perfectly suited for producing rosés that are well-balanced with a strong personality. They also pair beautifully with Cretan cuisine, which features an abundance of olive oil, fresh vegetables, and herbs. “3.14” is a natural, premium rosé with complexity and a touch of quirkiness that sets it apart from conventional styles.
It is ideal for serving at vegan and organic restaurants or alongside vegetable dishes.

Delicate aromas of fruit, including cherry and ripe orange, with subtle notes of powdered anise and a hint of freshly cut nectarine.
VINIFICATION
Saignée Method Rosé: The process begins with careful grape selection and destemming, followed by the gravity-fed transfer of the grapes—without the use of mechanical means—into stainless steel tanks for skin contact. The Kotsifali undergoes skin contact for 24 to 48 hours, while the Merlot is left in contact for 6 to 10 hours. Afterward, the wines are blended and fermented spontaneously in stainless steel vats at a controlled temperature. The wine is then aged briefly on fine lees before being naturally vinified and left unfined.

Pale rose with orange hues.
PALATE
Dry, with a smooth, oily texture on the mid-palate, balanced by refreshing acidity and a firm tannic grip that lingers through to the aftertaste.
