Each variety is handled separately with meticulous grape selection. The grapes are destemmed and transferred by gravity without mechanical assistance into stainless steel vats for maceration and fermentation. After fermentation, the marc is separated from the wine.<\/p>

For the Kotsifali wine, malolactic fermentation occurs in stainless steel vats.<\/p>

For the Mandilari wine, malolactic fermentation takes place exclusively in French oak barrels, where the wine then matures for 6 months.<\/p>

The two wines are then blended before bottling.
