The Paterianakis Estate is an aged wine made from indigenous grape varieties with a cosmopolitan character. The grapes come from old organic vineyards; the red Kotsifali variety is one of Crete\u2019s most notable, while Mantilari is renowned for its deep color and intense tannins. Together, they form a particularly successful blend.<\/p>

Kotsifali produces wines with high alcohol content and elegant aromas, while Mantilari adds primary aromas, an intense red color, and rich tannins.<\/p>

\u201cPaterianakis Estate\u201d consists of 80% Kotsifali and 20% Mantilari, holds PDO Peza certification, and has been produced by the Paterianakis family for four consecutive generations. Together with \u201cMelissino Ros\u00e9,\u201d they are among the first wines bottled at the winery. For each variety, the process begins with the careful selection and destemming of the grapes, which are transported by gravity\u2014without the use of mechanical means\u2014to stainless steel tanks to come into contact with the grape skins. After fermentation, the pomace is removed from the wine. Malolactic fermentation takes place in French oak barrels. The two varieties are blended before bottling.
