Merlot was harvested on the 25th of August, and Kotsifali on the 28th. Each variety was vinified separately using the Saign\u00e9e method, with native yeasts and fermented to complete dryness. The wine was bottled in early January and released in March.<\/p>

Ros\u00e9 wines are a fantastic expression of the Cretan terroir, as our climate is perfectly suited for producing ros\u00e9s that are well balanced with a strong personality. They also pair beautifully with Cretan cuisine, which features an abundance of olive oil, fresh vegetables, and herbs. “3.14” is a natural, premium ros\u00e9 with complexity and a touch of quirkiness that sets it apart from conventional styles.<\/p>

Saign\u00e9e Method Ros\u00e9: The process begins with careful grape selection and destemming, followed by the gravity fed transfer of the grapes without the use of mechanical means into stainless steel tanks for skin contact. The Kotsifali undergoes skin contact for 24 to 48 hours, while the Merlot is left in contact for 6 to 10 hours. Afterward, the wines are blended and fermented spontaneously in stainless steel vats at a controlled temperature.
